Are you a salty fan or a sweet tooth? I am a total salty freak – give me all the cheez-it’s and pretzels and snack mixes!
For those moments though when I want a sweet treat, I almost always want something with peanut butter!
These Chocolate Peanut Butter Brownie Bites are the perfect treat when you want something sweet or need some sort of quick snack. They are loaded with fiber from the banana and protein from the peanut butter. Also they are so small and cute, you don’t feel guilty about having two (or let’s be real…three!)
I love these brownie bites because they have a fudgy texture so they feel decadent but aren’t overly sweet. Plus they store well in the refrigerator for grab and go snacks all week! I love to enjoy them after a workout, for a sweet treat after dinner, or as a snack to hold me over until the next meal!
If you try these, let me know when you like to eat them!
Chocolate Peanut Butter Brownie Bites
Ingredients
- 1 large very ripe banana
- 1/2 cup creamy natural peanut butter
- 1/4 cup unsweetened cocoa powder
- avocado or grapeseed oil spray
Instructions
-
Preheat oven to 350*
-
Spray mini muffin tin with oil spray. Add banana, peanut butter and cocoa powder to blender or food processor. Puree until a smooth batter forms and there are no lumps.
-
Divide batter evenly into muffin tins - depending on the size of your banana, this will likely be between 14-18 mini muffins. Shake tin gently to smooth out batter. You can also smooth out the tops with the back of the spoon if your batter is very thick.
-
Bake muffins for about 20 minutes or until set. Let cool completely and remove from muffins from tins. Store in an airtight container the refrigerator.
