Yes, you heard right. Jicama, tomato and cucumber salad.
I love a good crisp tomato and cucumber salad at a party on a hot day. It’s cold, refreshing, make ahead and is basically all veggies. I mean, it’s a total party food win! So I took that classic tomato salad and made it even better – yep I said it. This is not your momma’s tomato and cucumber salad.
This recipe takes the classic tomato and cucumber salad and bulks it up with jicama, which is crunchy, filling and soaks up the shallot vinaigrette so well!
Are you familiar with jicama?
Jicama is a root vegetable which is also called a Mexican Turnip. It’s super crunchy, loaded with fiber and pretty tasteless. That’s why it goes so well in this recipe, it’s the perfect canvas to soak up all the incredible flavors going on in the salad.
It sounds exotic, but really it’s pretty widely available – Trader Joe’s even sells it pre-cut in their produce section! It also makes a great snack on it’s own- top it with some lime juice and chili powder- or as a dipper for hummus or guacamole.
Sold yet? So for this salad, the recipe couldn’t be easier. Toss the jicama, cucumbers and tomatoes in a large bowl. Whip up the shallot vinaigrette. Then just let it all sit together in the fridge until you are ready to serve. Right before serving, throw those basil leaves on top and a touch of salt, if needed. And you are done!
Make it in the morning, let it sit all day and then just pull it out for the party. It’s a no brainer!
