On a large piece of plastic wrap, roll our your crescent roll sheet into a large rectangle. If you are using actual crescent rolls, carefully pinch the seams together slightly so you have one large piece.
Spread pizza sauce evenly over the dough in a thin layer, leaving about an inch of space at one end dry. Sprinkle half the cheese evenly over the dough and then add the pepperoni in an even layer. Sprinkle the rest of the cheese over the top of the pepperoni.
Carefully starting at the sauced end, roll the dough towards the dry end, into a large log. Wrap tightly with plastic wrap and freeze for about one hour.
Remove roll from freezer and preheat oven to 400* While oven is preheating, Carefully slice the log into 1/2 inch thick slices and place on a baking sheet lined with parchment. Bake for 18-20 minutes until cheese is bubbly and dough is golden brown.
Serve immediately. Adding extra pizza sauce or ranch on the side to dip is highly recommended!
