Bacon, Egg and Cheese French Toast Muffins

Servings 12 muffins


  • 2 cups milk
  • 1 cup heavy cream
  • 16 ounces italian, french or challah bread
  • 6 ounces sharp cheddar cheese, shredded
  • 6 strips bacon, cooked crisp and crumbled
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper


  1. Preheat oven to 350*

    Tear bread into bite size pieces (or you can cut into 1 in cubes) and let sit out.  This recipe works really well with stale or day old bread!

  2. In a large mixing bowl, whisk together eggs, milk, cream, salt and pepper.  Once eggs are fully incorporated, stir in bacon and cheese.  

  3. Toss bread cubes in the milk and egg mixture until all the cubes are soaked. Carefully scoop bread cubes into a greased jumbo muffin tin until each tin is full.  Bake for 35-40 minutes or until the centers are cooked all the way through and the tops are crispy.
